First I wish all of you who follow me a happy 2011!
This cake is the last recipe I tried in 2010 and the first cake that I ate in the new year. It is a sponge cake filled with orange cream and chopped fresh fruit.
Ingredients (cake pan or a 26 cm square 23 x 23 cm)
3 eggs 3 tablespoons water Hot
110 g sugar (90 g + 20 g)
70 g flour 30 g starch
1 teaspoon baking powder 1 pinch salt
4-5 oranges (depending on size) 250 g quark
2 tablespoons orange juice 250 ml
cremefine to assemble (it is a vegetable cream) or cream
orange juice (to wet the cake)
powdered sugar Preparation Preheat oven
heated to 180 degrees.
Separate the yolks from the whites. Whip the egg yolks with hot water, 90 g of sugar and a pinch of salt for about 10 minutes until they become nice and puffy white.
Beat the egg whites stiff with a pinch of salt. Thoroughly mix flour, starch and baking powder and sift. Add the mixture to the egg yolks and sugar and flour alternately, stirring gently from top to bottom taking care not to remove the egg and trying to incorporate as much air as possible.
Pour the batter into greased and floured form, or covered with baking paper and cook for about 15 minutes. (Always do the toothpick test for cooking). Once baked the sponge cake to cool on a rack.

live in Peel oranges and cut the fillets from the pulp. Recover as much juice as possible to serve the soup and even a bit wet for 'cake before putting the cream. Working to make the quark
creamy with the addition of 2 tablespoons of orange juice and 20 grams of sugar. Whip cream and mix with quarks.
Halve the cake and sprinkle the bottom with a little 'orange juice. Spread the cream and then place over the orange slices prepared in advance. Sprinkle the other half of the cake and then place it over the fruit.
Let stand for at least an hour in a cool, before serving sprinkle with icing sugar.
