Muffins Apple Strudel

Finally my long awaited holidays are coming and that means bringing the snack at the office (for 30-35 people) and then last night I started work.

The recipe for these muffins I took from the book "Muffins klein, rund, Saftig - einfach genial" edited by OJ. It is a little book dedicated only to muffins and this recipe I liked it combines the classic flavors of apple strudel to the size of muffins. It's a little 'most elaborate of the usual recipe for muffins but the result is worth it.




Ingredients
(12 pieces)

200 g flour 80 g ground almonds (I've replaced with the hazelnuts) 3 teaspoons baking powder


60 g raisins 2 apples a bit 'sour (about 250 g peeled) 2 teaspoons
lemon juice 150 g yoghurt


2-3 teaspoons cinnamon 100 g sugar 1 pinch salt


1 package vanilla sugar 8 tablespoon oil (I took that rape is tasteless but with excellent nutritional factors) 2 eggs

Preparation

Place in the shape of the muffins in paper baking cups or grease it with butter and put it in a cool place. Turn the oven to 180 degrees to preheat.
Mix flour, almonds (nuts) and yeast. Wash in running water and then put the raisins in water to soften it.

Peel apples, cut them into quarters and remove the torso. Cut into small pieces approx. 100 g of apples and pour the apple juice, 50 grams of yoghurt and cinnamon and mix well.
finely grated apples and mix well with remaining sugar, salt, sugar, eggs and vanilla yogurt left. Finally We add the eggs and mix well again very well with a whisk.

Pour the liquid mixture to the flour mixed livito and almonds and stir quickly. Also add the apples with cinnamon and raisins, drain and dry well. Mix well and pour the mixture in the form of muffins.
Cook in oven warm to ca. 25 minutes. Once cooked, remove from oven and let cool in the form of at least 5 minutes before putting them on a wire rack to cool.
